The holidays are coming! Thanksgiving is first up, and you know what that means. Food. Lots of it. I don’t know about you, but Thanksgiving is one of my favorite holidays! Another favorite is Sweet Potato Casserole which is VERY rich. My grandma always used to make the kind with marshmallows on top, which is good, but this casserole is divine! If I didn’t love pumpkin pie so much, this casserole could be my dessert! My mom got this recipe out of an old church cookbook; so it isn’t original, it’s just a favorite.
- 40 oz. can of yams, mashed
- 3/4 c. white sugar
- 1 stick of butter, melted
- 1 t. vanilla
- 2 eggs, beaten
- Topping Ingredients
- 3/4 c. flour
- 1 c. brown sugar
- 1 c. chopped pecans
- 1/3 c. melted butter
- Mix first 5 ingredients and pour into a 2 qt. casserole dish
- Mix topping ingredients and sprinkle over yam mixture
- Bake covered at 350 degrees for 30 to 40 minutes
