Author Guest Post: From Tiffany’s Recipe Book!
Hello there!
Most of you might be familiar with my other series, the Nick and Nora mysteries! I have a new series out this month: Tiffany Austin, Food Blogger Mysteries! This one differs from the Nick and Nora’s in that the focus is on cooking rather than a cat Tiffany is an ex-chef turned food blogger. As a result, these books will be including more recipes – so I’d like to start out now with one of Tiffany’s favorites (which will be in a future book)
Tiffany’s Simple Squash Soup (Perfect for a chilly day)
You will need:
- 6 cups chicken stock
- 2 large eggs
- ¼ cup Parmigiano-Reggiano
- ¼ cup Pecorino Romano
- Parmesan Cheese
- 2 cups Sliced Squash (zucchini or yellow – Tiffany likes to mix it)
- Salt
- Pepper
- Cayenne
- 2 tblspoons EVOO
- Garlic clove cut into slices
In a skillet, heat the EVOO over moderate heat. Season sliced squash (as thin as you can get it) with Salt, Pepper and Cayenne and cook in skillet with garlic slices until squash is fully cooked. Remove from heat and set to side.
In a medium to large pot, bring the chicken stock to a simmer over moderate heat. In a small bowl, mix together the eggs and cheese. Slowly add mixture to stock, stirring constantly for one minute until the broth turns cloudy. Stir in the cooked squash and let simmer and heat through 2-4 minutes. Pour into bowls and sprinkle Parmesan Cheese lightly over top, then serve.
