Easy Pressure Cooker Beef Enchilada Pasta and Cheese

Servings 4 -6


  • 1/2 lb. lean ground beef
  • 8 oz. dry rotini pasta
  • 10 oz. can of red enchilada sauce
  • 2 c. beef broth
  • Seasonings to taste salt, pepper, garlic, onion, cumin, ground red pepper
  • 3/4 c. shredded cheese your favorite or whatever you have on hand


  1. Turn your MultiPot to saute and brown the ground beef
  2. Add pasta, enchilada sauce, and beef broth
  3. If the pasta is not covered, add a bit more broth
  4. Lock your MultiPot lid into place and close the valve
  5. Set it to high pressure cook for 4 mintues
  6. When it is done, allow it to naturally release for 4 minutes
  7. Quick release the MultiPot
  8. Stir in the cheese
