Butterbeer Ice Cream

This yummy butterbeer ice cream is great for any Harry Potter party or celebration!

  • 1/4 cup butter
  • 1/2 cup brown sugar packed
  • 1/2 tsp vanilla
  • 2 1/4 cup heavy whipping cream
  • 14 oz sweetened condensed milk cold


  1. Combine butter, brown sugar, 1/4 c. heavy whipping cream and vanilla in a saucepan.

  2. Cook on medium low heat for about 15 minutes, stirring constantly.

  3. Remove from heat when the sauce coats the back of a spoon. Allow to cool completely.

  4. Whip 2 cups of heavy whipping cream until if forms stiff peaks. 

  5. Add sweetened condensed milk and whip until thick.

  6. Add almost all of the sauce leaving a small amount for topping.

  7. Whip until combined.

  8. Pour mixture into a loaf pan that has been lined with wax paper. 

  9. Drizzle remaining sauce onto the ice cream mixture and swirl.

  10. Freeze for at least six hours and enjoy!
