Delicious Green Beans and Bacon Recipe

Fresh green beans right out of the garden are the best! My father-in-law gave some to the kids and me along with some tomatoes…which the kids won’t eat! I love fresh tomatoes too! I won’t buy them from the store because they are just too disappointing. Anyway, back to the green beans!

Green Beans and Bacon Recipe

My mom told me about a yummy recipe she tried using green beans from their garden. She’s been going through her old recipe books and cards and getting rid of what she doesn’t use. She came across this recipe which called for bacon and brown sugar. I told her that we had the beans but no bacon. Of course, I had to go get bacon to make the recipe! I mean….bacon!

This green beans and bacon recipe is delicious! The original recipe didn’t call for onions, but as onions are always good with green beans and bacon, she added them when she made them as did I. In a skillet, cook six slices of bacon (cut into 1″ pieces) and one sliced onion until the onion is translucent and the bacon is crisp tender.

Pour 1 T. of vinegar into a half cup measuring cup. Fill the measuring cup the rest of the way with water. Add this and 3 packed T. of brown sugar in with the bacon and onions. I made up the vinegar part because I love vinegar in my beans. You could add a little more or leave it out altogether if you don’t like it. My mom didn’t make hers with vinegar.

Add your green beans. I’m not sure how many we used, but you can just use as many as you want! Bring this to a boil and simmer, covered.

Cook them to the desired consistency. I cooked mine for about 30 minutes and they were exactly how I like them. Some people like them to be crispy though, so you wouldn’t want to cook them quite so long.

Ingredients

  • 6 slices of bacon chopped in 1 inch pieces
  • 1 medium onion sliced
  • 1 T. vinegar
  • ~1/2 c. water
  • 3 T. packed brown sugar
  • fresh green beans

Instructions

  1. Saute bacon and onion until onion is translucent and bacon is almost cooked
  2. Add 1 T. vinegar to a half cup measuring cup
  3. Fill that 1/2 c. the rest of the way with water
  4. Add brown sugar
  5. Add fresh green beans (enough to fill your skillet)
  6. Cook on low heat for approximately 30 minutes

This green beans and bacon recipe is so good! I ate way too much of it, but I probably could have had more!
