Easy Spicy Chicken Tortillas Recipe

When I don’t put something in the Crock-Pot in the morning, I have serious trouble making dinner. I get really tired in the afternoon, and I have trouble coming up with what to make if I wait until afternoon to decide. Thankfully, there are a few easy recipes I can make, and this is one of them.

I had half of a red pepper and half of an onion in the refrigerator leftover from making something else, so I used these. I sauteed them in my stainless steel skillet in a couple of tablespoons of olive oil until they started softening up. I try to keep the peppers pretty good sized because my daughter doesn’t like them. This way she can pick around them! I really use any color of peppers for this recipe because I like them all.

After the onions and peppers were a little soft, I added a pound of chicken breast cut into small pieces. As it is cooking, I usually cut the chicken up smaller with my spatula. I just think it makes it easier to eat when the chicken is in little pieces.

My son had made some really good spicy chicken a couple of weeks ago, so I asked him what spices he used instead of just using my normal taco seasoning. I used salt, pepper, crushed red pepper flakes, thyme, ground red pepper, garlic powder, and onion powder. I didn’t measure any of this because my son was standing there telling me to just shake everything in! Sometimes you come up with the best tasting stuff that way 🙂

I’d recommend using about a tsp of salt and 1/4-1/2 tsp of the rest of the ingredients. The only thing I used more than a tsp of was the ground red pepper which I used closer to a tablespoon of. This is really to taste. If you or your family aren’t fans of spicy things, you can cut it down or out all together. I never would have thought of adding thyme, but it really added a good flavor to the chicken.

I cooked that for about 15 to 20 minutes. Just cook it until the chicken isn’t pink inside. It will depend on how big your chicken pieces are.

When it is all done, throw it on a warmed flour tortilla, and add your favorite toppings like cheese, salsa, and sour cream. It was so good! It’s actually really filling as well. You could serve this with a side of black beans or refried beans, but this was all we needed that night. Fold and enjoy!
