When it is hot, the last thing you want to do is cook a meal in the oven. It’s hot enough without that added heat. I’ve got a couple of easy recipes for you that don’t require you to even turn on the oven. They both use mouthwatering Heluva Good!® Block Cheese. Of course, you could just go for plain old cheese and crackers…and I do on occasion…but this broccoli salad and these kabobs are super easy and super yummy!
Broccoli Salad with Heluva Good! Colby Jack Cheese
I am pretty sure that this broccoli salad is one of my favorite foods on earth. It’s got cheese, sour cream, mayo, bacon, sugar…what could be better? Plus, it has broccoli and cauliflower, so they’ve got to cancel out any fat, right? Broccoli salad is a staple at our family reunions, and it makes a great side for a summer meal.
I’m not sure why this isn’t called cauliflower salad since it has just as much cauliflower as broccoli…one of life’s mysteries. Chop up one head of broccoli and one head of cauliflower into small pieces.
I love colby-jack cheese, so I chose to use Heluva Good Colby-Jack from Walmart for my broccoli salad. You can experiment with whatever cheese flavor you like best. Cheddar works well in this too. Cut an 8 oz block of Heluva Good Cheese into tiny chunks and mix it in with the broccoli and cauliflower.
This dressing is the bomb! My mom gave me the recipe from an Amish cookbook she has, and it’s become my favorite way to make broccoli salad. This dressing would be awesome on 7-layer salad or pea salad too. It takes sour cream, mayonnaise, sugar and salt. That’s it! Then just add this to your broccoli, cauliflower and cheese and mix well. Finally top the salad with 6 oz. of “real” bacon pieces. I use the kind that comes in a bag, but you can fry up your own too if you want to. I just didn’t want to have to use the stove at all.
See how easy that is? Granted, I could just eat this broccoli salad as a meal, but I don’t think my kids would appreciate that. We’ve already established that Heluva Good Cheese is delicious, but it is versatile too. You can use it in so many recipes and in so many ways. To appease my kids, I made meat and cheese kabobs to go along with the broccoli salad.
Kabobs with Trail Bologna and Heluva Good! Cheeses
I know some of you may have no clue what trail bologna is. I think you probably have it where you live, but you probably call it something other than trail bologna. Maybe ring bologna. All I know is that it is really good with cheese! We have trail bologna and cheese with a variety of olives and pickles every New Year’s Eve and Super Bowl. It’s a tradition. I figured I’d take those ingredients and make them into kabobs. If your kids are old enough, they’ll love making their own with whatever ingredients you provide.
If you’re entertaining guests for a picnic, you could cut up the trail bologna (or other meats), a variety of Heluva Good Cheese blocks, pickles, olives, jarred peppers…whatever ingredients you want…and put this out on trays with skewers for your guests to create their own kabobs. They are good and really easy. No oven required.
My daughter made a baby quinoa and fruit salad, and this, along with kabobs and broccoli salad, made the perfect summer meal. For the baby quinoa salad, she cooked the grain according to the box, and added sliced strawberries and blueberries after it had cooled a bit. She added chopped mint leaves and the juice and zest of half a lemon. It was really refreshing.

Broccoli Salad Recipe
Broccoli Salad
Ingredients
- Head of broccoli
- Head of cauliflower
- 8 oz. Heluva Good Colby-Jack Cheese
- 6 oz. crumbled cooked bacon or bagged bacon pieces
- 1 c. mayonnaise
- 1 c. sour cream
- 1/2 c. sugar
- 1/2 t. salt
Instructions

Chop broccoli and cauliflower into small pieces

Chop cheese into small cubes

Mix above ingredients

Mix mayo, sour cream, sugar, and salt in a separate bowl

Mix this dressing in with the broccoli, cauliflower, and cheese

Cook bacon to crisp if not using bagged pieces

Top salad with bacon

Chill and serve

Colby jack cheese is one of my favorites, it's so good! Hubby would enjoy that salad, he'd really like that you added bacon.
