Happy summer, readers! I hope you all are enjoying your summer. It’s been kind of rainy here in Ohio, but we have had some nice hot, sunny days. One of my favorite things to do on a hot, sunny day is get ice cream. I mean, is there anything better than a cold treat on a hot day? I discovered this One Scoop Ice Cream Cupcakes recipe this week, and I knew I had to share it with you! It’s true they might not actually be ice cream, but I can guarantee that a frozen dairy treat will pair nicely with these ice cream cupcakes and make for a great summer treat!
One Scoop Ice Cream Cupcakes Recipe
For this perfect summer treat recipe, you will need:
- 6 Prepared Cupcakes, unfrosted
- 1 Can Chocolate Frosting
- 1 Can White Frosting
- 1 pkg. Vanilla Wafer Cookies
- 1 pkg. Cherries Gummy Candy (Haribo)
- Pink Food Coloring
- Star Tip for Piping
- Piping Bag or Plastic Baggie
You may also want to include Non Pareil Sprinkles, but they are not required to make your own one scoop ice cream cupcakes!
Your first step after gathering the ingredients is to cut 3 vanilla wafer cookies in half and cut each half into a cone shape.
Next, Frost each cupcake with a thin, smooth layer of white frosting. Once frosted, set a wafer cone on top of each cupcake with the wide end of the cone laying on the middle and the point end hanging over the edge of the cupcake.
In a small bowl, mix some white frosting with a few drops of the pink coloring. Put this pink frosting into the piping bag.
Pipe a circle of pink frosting right above the cone so it looks like a scoop of ice cream. At the bottom of the pink circle, right where the cone line meets the pink frosting, pipe about 5 rosette dots in a row. You want it to look like the little rim on the scoop of ice cream when you scoop it out.
Repeat this step for the next two cupcakes, then switch to the chocolate frosting for the remaining three cupcakes. Don’t forget to put the chocolate frosting in a piping bag!
Don’t forget to decorate! Place a cherry gummy at the top of the round circle scoop. If you opted to use sprinkles, now is the time to sprinkle them on the ice cream scoop.
Finally, enjoy this perfect summer treat! You can serve these One Scoop Ice Cream Cupcakes as is, or you can serve them with ice cream. Your choice!
