Keto Peanut Butter Cookies Recipe | Gluten Free and Keto Approved

Are you eating a keto approved diet? I’ve got a lot of friends who are, and they love it. I’m still on the fence, but as I hear more, I’m trying to at least cut some cabs and most sugar. No, I’m not using fake sugar! I’m either just not using it or using stevia. This Keto Peanut Butter Cookies recipe is really good. No, they don’t taste just like peanut butter cookies with flour and sugar, but they are keto approved and satisfying. Bonus: they’re also gluten free.

Keto Peanut Butter Cookies Recipe

Combine the following using a mixer:

Ingredients
2 cups of sugar-free peanut butter
1 cup of cream cheese (room temperature)
2 eggs
2 tsp of vanilla extract
4 Tbsp of liquid Stevia

Coat your hands with a bit of coconut oil, roll the dough into one inch balls, and place them on a cookie sheet that’s been lined with parchment paper. Criss-cross the tops with a fork.

These cookies won’t spread, so you can fit 15 on a cookie sheet. This recipe makes 30 cookies. They take about 10 minutes to bake, but they’re done when they are golden brown.

Ingredients

  • 2 cups sugar free peanut butter
  • 1 cup cream cheese room temperature
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/4 cup liquid stevia

Instructions

  1. Preheat oven to 350 degrees.

  2. Combine all ingredients with a mixer until incorporated well.

  3. Line a baking sheet with parchment paper.
  4. Use a little coconut oil on your hands, and roll and place 1 inch cookie balls on the parchment paper.

  5. Using a fork, flatten the cookie balls with the classic peanut butter cookie criss-cross design.

  6. Bake for 10 minutes, or until outside is golden brown.

This is a great recipe to make with your kids. I remember making peanut butter cookies with my mom and wanting to do the criss-cross with the fork. Make yummy cookies and memories at the same time!
