Sandwich Cookies with Cranberry Butter
You need to plan ahead when you make this recipe! Do you ever plan on making cookies only to find that you’re not going to have enough time? Like maybe you forgot that the dough needs chilled. I’m giving you your warning way up here at the top! You need to make the cranberry butter ahead of time! It’ll take a good 3 1/2 hours or so to prepare the cranberry butter, so plan ahead!
You’re going to need a slow cooker too. If you don’t have one, this Crock-Pot is a great choice!

Sandwich Cookies with Cranberry Butter
These buttery sandwich cookies filled with cranberry butter are just the thing to make your holidays (and any day) brighter and tastier!
Ingredients
Crock-Pot Cranberry Butter
- 2 12 oz. bags cranberries rinsed
- 1 c. light brown sugar
- 2 whole cinnamon sticks
- 1 c. apple cider
Sandwich Cookies
- 1 c. unsalted sweet cream butter softened
- 1 1/2 c. powdered sugar
- 1 tsp. vanilla
- 1 egg
- 3 c. flour
- 1 tsp. baking soda
- 1 tsp. cream of tartar
- medium round cookie cutter with ridges
Instructions
Cranberry Butter

Combine all ingredients in a Crock-Pot and mix until combined

Turn Crock-Pot to high and cook until the cranberries are soft, about 2 hours

Remove the cinnamon sticks and scoop the mixture into a food processor or blender

Blend until smooth

Using a strainer, push the cranberry mixture through using a rubber spatula

Discard what is in the strainer

Place the cranberry butter back into the Crock-Pot and turn to low

Cook for about an hour on low, until thickened
Sandwich Cookies

Preheat oven to 350 degrees

Line two cookie sheets with parchment paper

Using a stand mixer, cream together butter, powdered sugar, vanilla and egg and mix until combined and creamy

In a large bowl, combined the flour, baking soda and cream of tartar

Gradually add in the dry ingredients to the wet ingredients and mix on low speed until combined

Using your hands, continue to mix until fully combined

Lightly flour a cutting board and knead the cookie dough a couple of times

Roll out the dough to about 1/2 inch thick

Cut out 48 rounds and place 12-15 cookies onto a cookie sheet

Bake for 8 minutes or until lightly golden brown

Repeat steps until you're completely out of dough

Let cookies cool completely

Pair up the cookies based on matching size and create 24 sandwich cookie shells

Using a large spoon, scoop some cranberry butter onto the bottom cookie

Place the top cookie onto the bottom cookie and sandwich together
Recipe Notes
You can make the cookies while the cranberry butter is cooking. The total prep time and cook time are approximate. You know how to multitask, right?
