Butterbeer Maple Pecan Bread Pudding

This Butterbeer Maple Pecan Bread Pudding is perfect for all of you Harry Potter and Fantastic Beasts lovers! Butterbeer tastes much like butterscotch...it's just more fun to call it Butterbeer!

Ingredients

  • 3 cups day old Italian bread torn into chunks
  • 2 cups granulated sugar
  • 5 eggs large
  • 2 cups whole milk
  • 2 tsp vanilla
  • 2 Tbsp pure maple syrup
  • 1/2 cup butterscotch chips
  • 1/2 cup light brown sugar packed
  • 1/2 stick unsalted butter softened
  • 1 cup pecans chopped

Instructions

  1. Preheat oven to 350 degrees. 
  2. Prep a 13 x 9-inch baking dish by spraying it with baking spray.
  3. In a medium bowl add the granulated sugar, eggs, milk, vanilla and maple syrup. 

  4. Mix together to combine.
  5. Put your cubed stale bread in a large bowl along with the pecans and butterscotch chips. 

  6. Pour the egg mixture over the bread.
  7. Stir to combine.
  8. Allow this to sit for 10 minutes.
  9. Pour the bread pudding into the prepared baking dish.
  10. Mix together the brown sugar and butter in another bowl.

  11. Sprinkle the brown sugar mixture over the top of the bread pudding.

  12. Bake at 350 degrees for 35 to 45 minutes. 
  13. Remove it from the oven. Set aside.
