Mini Coffee Cakes: Perfect for a Mother’s Day Treat

Ingredients

  • For the Topping:
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 2 tsp cinnamon
  • 1/8 tsp ginger
  • For the mini coffee cake batter:
  • 1/2 cup melted butter
  • 1 1/2 cups white sugar
  • 1 1/2 cups whole milk
  • 2 eggs
  • 3 cups flour
  • 4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 T cinnamon
  • 1/4 tsp ginger
  • 2 tsp vanilla

Instructions

  1. Turn oven to 375 degrees
  2. Line muffin tins with cupcake liners and spray with baking spray
  3. Topping Instructions
  4. Melt butter
  5. Add in sugars
  6. Add flour
  7. Add spices
  8. Mini Coffee Cakes
  9. Melt butter
  10. Add sugar and mix
  11. Add milk and mix
  12. Add eggs, one at a time, mixing between each
  13. Mix in flour, baking soda, baking powder, salt
  14. Mix in spices and vanilla
  15. Pour 1/4 cup batter into each of 24 cupcake liners and top with crumb topping
  16. Bake 15 minutes or until a toothpick comes out clean
