Easy Cheese Soup

When I was younger, I was always Grandma’s girl. My mom tells me that even as a baby I would cry when she and my grandpa would be getting ready to leave. They would have to drive me around the block before they could leave, so I would stop crying! I think that set our relationship in motion. Grandma always let me have my way! You know the saying, “If Mom says no, ask Grandma.” Total truth in my case.

As soon as I was old enough to use the phone, I would call Grandma and ask her if I could spend the night, pretty much every Friday night. When my sisters got older, they tried to butt in on my Grandma time. Unfortunately, I had to share and let them have Fridays sometimes.

Going out with Grandma

One thing Grandma would always do was take me out to eat. That was a treat back in the old days! Families didn’t eat out as much as they do now, so going to Grandma’s meant going out to eat! When I was a teenager, one of our favorite places to go was Abigail’s Tea Room. It was a cozy, little restaurant that specialized in soups, finger sandwiches, and tea, of course.

Though it closed years ago, we all (everyone who ever ate there!) tried to replicate their cheese soup recipe after they closed. I’m not sure that anyone completely captured the exact deliciousness of Abigail’s Cheese Soup, but this recipe is really close. It is very cheesy and creamy and perfect for a chilly winter night’s dinner.

I doubled the recipe, so we’d have leftovers! The recipe calls for one stick of butter, so don’t think it’s an error…I just love this soup!

Easy Cheese Soup

Ingredients

  • 1/2 lb. Velveeta cheese cubed
  • 1 stick of butter
  • 1 quart of milk
  • 1/2 T. onion powder
  • 1/2 c. flour
  • 1/2 t. seasoned salt
  • 1 can mixed vegetables

Instructions

  1. Melt the butter and make a roux with the flour.
  2. Slowly add the milk and heat until warm.
  3. Add cheese and stir until melted.
  4. Add seasonings.
  5. Add mixed vegetables.
  6. Stir until heated through.

This soup is so good! As you can see, it takes butter and milk and cheese, so why wouldn’t it be good, right? I used part whole milk and part 2% because we had a little bit of whole milk left that needed to be used up. My son, who is 19, will only drink whole milk…spoiled rotten kid!
