We’ve been in the pumpkin spice everything for several weeks now, but I thought you’d all appreciate another (healthier) way to get your fix. These Paleo Pumpkin Spice Pancakes could also be Keto too with a couple of adjustments. I just can’t handle the after taste of the Keto approved sweeteners, but if you can, this can easily be Keto approved.
I’m sure you’re probably familiar with the concept of eating a Paleo diet. It’s named after the Paleolithic era, when people ate foods that were available to them like lean meats, fish, fruits, vegetables, nuts and seeds. This type of eating is similar to Whole30 except that natural sugars are okay to eat on the Paleo diet.
And that leads us to these delicious, Paleo Pumpkin Spice Pancakes!
Paleo Pumpkin Spice Pancakes
I love this recipe not only because I love pancakes but also because they’re easy to make! With a prep time of only 10 minutes and another 10 minutes to cook enough for 4-6 people, you’ve got a quick, healthy meal that everyone will enjoy!
Prep time: 10 minutes
Cook time: 10 minutes
Serves: 4-6
Ingredients:
6 large eggs
2/3 c. pure pumpkin puree
2 T. honey
½ c. almond flour
½ c. coconut flour
1½ t. baking powder
1 T. pumpkin pie spice
1/8 t. salt
3 T. coconut oil, divided
To serve:
1 banana, sliced thin
1/3 c. pecans, chopped
Optional: Real maple syrup
Directions:
In a large mixing bowl, whisk the eggs, pumpkin puree, and honey until thoroughly combined.
In a separate bowl, combine the almond flour, coconut flour, baking powder, pumpkin pie spice, and salt.
Add the dry ingredients to the bowl with the egg mixture and gently fold the two together until blended.
Heat one tablespoon coconut oil in a large griddle over medium heat. Once hot, spoon 2-3 tablespoons per pancake and cook for 3 minutes on the first side, then flip and cook for another 2-3 minutes on the other side. Repeat this process with remaining coconut oil and pancake batter.
To serve, stack 2-3 pancakes per serving and top with sliced bananas, chopped pecans, and a drizzle of maple syrup, if desired. Enjoy!

Ingredients
For the pancakes
- 6 eggs large
- 2/3 c. pure pumpkin puree
- 2 tbsp honey
- 1/2 c. almond flour
- 1/2 c. coconut flour
- 1 1/2 tsp baking powder
- 1 tbsp pumpkin pie spice
- 1/8 tsp salt
- 3 tbsp coconut oil divided
Pancake topping
- 1 banana thinly sliced
- 1/3 c. pecans chopped
- real maple syrup optional
Instructions
