Best Ever Chocolate Cupcakes

These chocolate cupcakes are SO good. Sure, you can buy a mix, but why would you! Make these instead!

Ingredients

  • 3 T. coconut oil
  • 1/2 c. butter
  • 1/2 c. semi-sweet chocolate chips
  • 1 c. sugar
  • 2 eggs plus 1 egg yolk
  • 1 t. vanilla
  • 3/4 c. plus 2 T. flour
  • 1/2 t. baking soda
  • 1 t. baking powder
  • 1/2 t. salt
  • 1/2 c. cocoa powder unsweetened
  • 1/2 c. sour cream not light or fat free
  • 1/2 c. hot water

Instructions

  1. Preheat oven to 350 degrees
  2. Line cupcake tin with liners and lightly spray with baking spray
  3. Melt coconut oil, butter and chocolate chips over low heat
  4. Combine flour, baking soda, baking powder, cocoa powder, and salt
  5. In a separate bowl, stir together eggs, yolk, sugar and vanilla
  6. Add the melted chocolate mixture to the egg and sugar mixture
  7. Add half of the flour mixture
  8. Add 1/4 c. sour cream
  9. Stir lightly
  10. Add the other half of the flour mixture
  11. Add 1/4 c. sour cream
  12. Stir lightly
  13. Add hot water and stir quickly
  14. Don't overmix
  15. Pour into prepared cupcake liners
  16. Bake for 16-18 minutes
  17. Cool and frost with your favorite buttercream frosting
  18. Top with a mini chocolate donut
