Filling Ingredients:
- 8 large, ripe peaches, pitted and chopped
- 1/3 c. white sugar
- 2 T fresh lemon juice
- 2 t. all-purpose flour
- 1 t. kosher salt
- 1 t. nutmeg
- add 1 t. cinnamon
- 1 t. real vanilla extract
- ¼ c. packed brown sugar
Topping Ingredients:
- 1 c. all-purpose flour
- ¾ c. sugar, divided
- 1 t. kosher salt
- 1 t. baking powder
- ¼ cup heavy cream
- ¼ cup of water
- 8 T. unsalted butter, very well chilled
- 1 egg white, beaten with water added
How to make Peach Cobbler from Scratch
- Place the top oven rack in the center position and pre-heat oven to 400°F.
- Add peaches, sugar, lemon juice, flour, salt, nutmeg, cinnamon, and vanilla extract to a large bowl and toss to combine.
- Transfer to a greased 8” x 8” baking pan and spread into an even layer. Sprinkle brown sugar on top of the peach mixture before placing the pan in the preheated oven. Bake for 10 minutes.
- Add flour, ½ cup sugar, salt, and baking powder to a different bowl and stir to combine. Chop chilled butter into very small pieces with a sharp knife. Add to bowl and combine with dry ingredients with your fingers until small pebble-sized pieces are formed.
- Add heavy cream and water to the flour mixture and stir with a fork until all the dry ingredients are moist and somewhat sticky. Do not overwork the dough.
- Remove baking pan from oven and carefully spoon dough over the top, making sure the dough is the same thickness throughout. Leave spaces in between, as pictured, for a more rustic look.
- Return to oven and bake for another 10-15 minutes, or until the topping begins to brown. Remove from oven and brush the top with the egg white wash and sprinkle remaining sugar on top. Return to oven to finish baking, another 10-15 minutes. Remove from the oven when the top is golden brown.
- Allow pan to cool slightly before serving on its own or topped with whipped cream or ice cream. Enjoy!
TIPS FOR MAKING THIS PEACH DESSERT
- Make certain that you’re not overworking the dough. This will cause it to be hard and nonflaky like it should be.
- Even though this recipe tastes amazing with fresh peaches, you can use canned peaches as well. You can also easily change up this recipe and use any type of fruit, too.
- Be certain that you’re draining any excess liquid from the peaches before adding into the mixture or it might not bake up quite right. You don’t want to have a runny homemade peach cobbler!
What is the difference between cobbler and pie?
Cobblers are a sweet dessert that are typically made with fruit and doesn’t have the crust to worry about baking. Pies, on the other hand, have a bottom and sometimes top crust and don’t have to be made with fruit.
Can you make a cobbler the night before?
If you’re wanting to meal prep a bit, you can create your peach cobbler the night before. Once you’re ready to bake it, pop it in the oven and finish it off. (I would wait to add on the dough topping though until right before you’re going to bake it. You can make that ahead of time as well but don’t combine the two until you’re putting it into the oven.)
Why is my peach cobbler so runny?
This happens and is actually pretty common. You need to be certain that you’re draining out as much of that fruit juice as possible. If not, your cobbler will be runny. (still yummy though!)
Is Peach Cobbler good the next day?
If you happen to have leftover peach cobbler, just place it in the fridge for storage. As long as you consume it within 2 days, it should be fine and will taste great!
